Banana Nut Waffles

These were good. Found them in an old recipe book I had.  I had a couple of bananas that were going out.  Waffles are a cheap dinner.

Here's what I used (yields around 8 waffles):

2 egg, room temp and separated
2 cups all purpose flour
2 tsp baking powder
1/4 tsp salt
2 tbs sugar
1 cup milk
2 cups mashed bananas (about 4 medium, well ripened bananas)
8 tbs butter, melted and cooled
5-6 tbs chopped nuts (I used pecans)

Beat egg white in a small bowl until stiff and set aside.  Mix together dry ingredients and set aside.  Combine egg yolk, milk, banana and melted butter.  Add to dry ingredients, mixing until just blended.  Add nuts and fold in with beaten egg white until just mixed.  Do not overbeat batter.

Yep.  They were good.
