This meal serves around 6 people. If you need something quick, pretty painless, and economical try it.
Here's what I used:
1 1/2 pounds of chicken cut into bite size pieces
14.5 oz can diced tomatoes with juice
6oz box of chicken flavor Stove Top stuffing (I didn't have it this time - used cornbread and it was about the same)
1/2 cup water
2 cloves garlic, minced
1 tsp dried basil
1 cup shredded mozzarella
Preheat oven to 400F.
Spray 13x9 pan with oil. Spread chicken pieces in bottom of the pan (uncooked).
Pour undrained tomatoes into a medium sized bowl. Add stuffing mix, water, and garlic. Mix until stuffing is moistened.
Sprinkle basil and cheese on top of chicken. Top with stuffing mixture.
| Sorry the 90degree shift in the picture. Just turn your head sideways and you'll get the point :) |
Bake for 30 minutes or until chicken is done.
And that's it! Its really good!
| He's debating it right now. It took him about an hour, but he finally ate it. And like it. |
