Bruschetta Chicken Bake

Talk about the easiest recipe ever.

This meal serves around 6 people.  If you need something quick, pretty painless, and economical try it.

Here's what I used:

1 1/2 pounds of chicken cut into bite size pieces
14.5 oz can diced tomatoes with juice
6oz box of chicken flavor Stove Top stuffing (I didn't have it this time - used cornbread and it was about the same)
1/2 cup water
2 cloves garlic, minced
1 tsp dried basil
1 cup shredded mozzarella

Preheat oven to 400F.

Spray 13x9 pan with oil.  Spread chicken pieces in bottom of the pan (uncooked).


Pour undrained tomatoes into a medium sized bowl.  Add stuffing mix, water, and garlic.  Mix until stuffing is moistened.


Sprinkle basil and cheese on top of chicken.  Top with stuffing mixture.

Sorry the 90degree shift in the picture.  Just turn your head sideways and you'll get the point :)

Bake for 30 minutes or until chicken is done.


And that's it!  Its really good!

He's debating it right now.  It took him about an hour, but he finally ate it.  And like it.
Cost Breakdown:

Chicken: $2.50
Tomatoes: $1.00
Stuffing: $1.75
Cheese: $.50

Total Cost: $5.75
Cost per person (all 4 of us ate this meal!): $1.44!
