Homemade Hash

So this is what I make if we're ever having breakfast food or we need a hearty side.  I just change up the seasoning depending on the occasion.

Here's what I used:

1 1/2 pounds of red potatoes, cut into 1 inch pieces
1/2 medium onion, chopped
2tbs butter
Salt, to taste
Pepper, to taste
Spices, to taste

Melt butter in a large skillet.  Place onions in and cook for around 5 minutes, or until translucent.  Add potatoes.  Season. Cook on medium high heat for around 30 minutes.

*I used the Weber Grill New Orleans seasoning.  It has a little bit of a kick and some garlic, so it tastes pretty good.  I would say I probably use around 2-3 tsp if I were to measure it out.

Start this one early since it does take a while for them to cook out.  And honestly, I don't think you can really overcook them.  If you feel like they're getting too done, just cut back the heat. 

For other meals I have added fresh rosemary and thyme as my seasoning.  It makes the house smell wonderful!  You could probably do a more Asian theme too and add red pepper and some soy sauce or sesame oil.  Just play with some combination.

A quick and easy side that is very versatile.  I was going to do the cost breakdown, but I bet it cost less than a $1 total since I had a large bag of potatoes!!
