Burritos with Baked Black Beans

Easy meal that even JJ ate last night.

I'll first walk you through the beans.  This was in place of the recipe I said I was going to use because of time.

Here's what I used for the beans:

1 can black beans, drained and rinsed
1/2 can rotel, drained
1/2 cup cheddar cheese, grated

Preheat Oven to 350F

Mix the beans and rotel in a baking dish, cover with foil and place in oven for approximately 15 minutes (or while you assemble your burrito dish).

Remove from oven.  Take off the foil, cover with cheese and then place back in the oven when you place your burritos in to melt the cheese.

These weren't bad and they weren't too spicy.  Just enough flavor.


Here's what I used for the burritos:

1 pound ground beef
1 taco seasoning package
1 package quick-cook rice (Uncle Ben's 90 second Santa Fe Whole Grain), cooked
4 large tortillas (burrito size)
6oz cheddar cheese, grated
1 small can enchilada sauce, divided
 
Step 1: Turn Ground Beef to Taco Meat

Brown and drain your ground beef.  Read the taco seasoning package and follow directions to make the taco meat.  Set aside.


In a 13x9 pan pour 1/2 of the enchilada sauce on the bottom.  Set aside.


Step 2: Prepare burritos

Heat about a 1/4 inch of oil in a large skillet on medium-high heat (the skillet has to be large enough to lay the tortilla down in).  Submerge the tortilla in the oil and flip once quickly, not letting the tortilla get too bubbly.  Pull tortilla out and place on paper towels to allow to drain.  Blot tortilla with a paper towel to remove excess oil on top.


Move tortilla to a working surface then add the taco meat, rice, and cheese to the tortilla.  Fold the sides in and then roll to close.



Place the tortilla seam side down in the baking dish on top of the enchilada sauce.  Repeat steps until all burritos are made!


Step 3: Top and Bake

Top the burritos with any remaining taco meat, remaining enchilada sauce, and cheese.  Place in the oven and bake for about 5-7 minutes, or until the cheese is completely melted on top.



Topped with sour cream!
The key to this is the tortillas in the oil.  This allows the tortillas to become more pliable and easier to shape without ripping.  It really makes a difference.  Make sure to get as much of the oil off the tortillas when you pull them out though or it will taste a little like oil!

Cost Breakdown:

Ground beef: $2.50
Tortillas: $1.00
Rice: $2.00
Enchilada Sauce: $1.25
Cheese: $1.50
Black Beans: $1.00
Rotel: $.50

Total Cost: $9.75
Cost per person (all 4 of us ate this!): $2.44
