Stuffed French Toast

This was on a whim last night.  But ended up being really good.

Here's what I used:

8 pieces of Texas Toast Bread
4oz of cream cheese, softened
4oz of raspberry jam (I used my Raspberry Mango Jam - worked perfect!)
5 eggs, beaten
1/4 cup milk
1.5 tsp of vanilla
2T of butter

Melt butter in a large skillet on medium heat.

Take cream cheese and spread on 4 pieces of bread.  Spread raspberry jam on the remaining 4 pieces of bread.  Put cream cheese and raspberry jam together, like a sandwich. 

In a large bowl, combine eggs, milk, and vanilla.  Dip 'sandwiches' into mixture, making sure to coat all sides and then place in skillet.  Cook until the side is a golden brown, then flip.  After both sides are golden brown, remove from heat and top with desired toppings (we just did syrup, but you could do fresh fruit, whip cream, etc).

Served this with sausage.  It was really good!

Haven't done this in a while, but here is the cost breakdown:

1/2 loaf of bread: $1.50
Cream cheese: $.75
Jam: No idea! (Cost would probably go up a bit since I didn't factor this in - but use a coupon and get your jam cheap!)
Sausage: $2.00

Total for dish: $4.25
Dish divided for 3 people: $1.42/each
