Roasted Red Potatoes

Great, easy side that always turns out good.

Here's what you need:

1 to 1.5 pounds of red potatoes, cut into 1 inch pieces
2tbs oil
2 cloves garlic, minced
1tsp salt
1/2tsp pepper

Preheat oven to 450F.

Mix all items and spread on to one layer on a foil lined baking sheet.  Bake for 20 minutes, turning once half way through.

Let cool and enjoy.
