Broccoli Salad

We were spoiled living in the Mid-Atlantic for 6 years.  There is a large population of Amish and they make AMAZING food.  I got use to going to our local farmers market and getting their Broccoli Salad.  It was sweet, tart, and bacony.  Amazingness.

So to go along with a few of our meals this week, I thought our side could be Broccoli Salad. I jumped over to allrecipes.com to find a base for the dressing.  Here's what we included in our salad:

6 cups of broccoli florets (make them small enough for your to eat in one bite)
2-3 cups of finely shredded sharp cheddar cheese
8 strips of bacon
3/4 cup mayo
1/2 cup white vinegar
1/4 cup sugar

Take the broccoli, cheese, and bacon and mix together well.  Set aside.

Mix together the mayo, white vinegar, and sugar well.  We whisked it.  You want to get a creamy mixture with no lumps, so you might have to work on it a little bit.

Add mayo mixture to the broccoli mixture.  Stir to coat well.  Allow to refrigerate for at least an hour before eating.  We ended up not eating this yesterday (an odd chain of events caused us to not eat at home), so I haven't done the taste test yet.  I'm sure it will be amazing!  The bacon will be added right before we eat it!  Yummm!
