Cheesy Cornbread Stuffing

Made this with our turkey dinner last night.  Its from my mom - not sure where she got it.  It could be considered a meal on its own.  Its really good.

Here's what I used:

1 pound breakfast sausage
2-8oz packages cornbread stuffing
2 slices white bread, cubed
1 cup sliced green onions
1/2 cup chopped celery
1 cup shredded cheddar
1 1/2 tsp poultry seasoning
1/4 tsp pepper
2 - 14.5oz cans chicken broth
3 eggs, slightly beaten
1 1/2 tsp chopped parsley
1/2 cup shredded cheddar

Preheat oven to 350F.

Crumble & brown sausage; drain.  Combine with stuffing, bread, onions, celery, 1 cup cheddar, poultry seasoning, pepper, broth & eggs.  Pour into a 3 quart baking dish.  Sprinkle with parsley & 1/2 cup cheddar.  Bake for 30 to 35 minutes.  Serves 8.
